Delicious Pork Menudo!

Everybody loves to eat a delectable menu with distinct tastes of sweet and sour made from rich tomatoes. One of the favorites in the Filipino table is the pork menudo. Here is how to cook delicious pork menudo!


INGREDIENTS

3/4 k. of pork belly or loin
1/4 k. of pork liver
1 tbsp. pf minced garlic
2 onions
4 tomatoes
2 bell peppers
3 potatoes*
1 carrot*
3 tbsp. of raisins
1/2 c. of sweet peas
1/2 c. garbanzos (chick peas), optional
1/4 c. of tomato paste
1 bay leaf
1 tbsp. of olive oil
1/4 c. of vegetable oil (if you’re going to fry the potatoes; see notes below)
meat broth or water
salt and pepper to taste

Cooking procedure

In a pan or wok, heat cooking oil and atsuete oil. Saute garlic, onion. Then add the pork, liver, chorizo de Bilabo, tomatoes, bell pepper, paprika, patis and the stock.

Cover and bring to a boil. Simmer for 20 minutes or until the pork is tender. Add the chickpeas, potatoes and raisins. Boil of another 2 minutes.

Salt and pepper to taste. Serve hot with white rice.

Pork menudo estimated cooking time is 50 minutes depending on the tenderness of the pork meat.
